A Spring Recipe: Creamy Green Goddess Protein Salad

Salad season is back and gosh i’m happy about it! Fr me the dressing is key. This yummy, creamy, protein- and fibre-packed lunch is ready in 15 mins and is packed with B vitamins and protein for an energising afternoon. Top it with creamy avocado, chicken, tempeh and crunchy seeds!

Recipe (for 2):

Ingredients:

🌿 Base of chopped lettuce or salad leaves (any variety you prefer)

🌿 1 can chickpeas, drained & rinsed

🌿 1 red onion, thinly sliced

🌿 1 avocado, sliced

🌿 4 tbsp seeds for topping

For the Dressing:

πŸ₯› 1 cup Greek yogurt (or non-dairy yogurt)

🀍 2 tbsp nutritional yeast

🌿 1/3 cup fresh parsley, chopped

πŸ§„ 2 cloves garlic, minced

πŸ‹ Juice of 1 lemon

πŸ§‚ Salt & pepper to taste

Directions:

1. SautΓ© the chickpeas in a drizzle of olive oil over medium heat until golden, about 5-7 minutes.

2. Make the Dressing: Blend Greek yogurt, nutritional yeast, parsley, garlic, lemon juice, salt, and pepper until smooth.

3. Assemble: Layer crispy lettuce, sautΓ©ed chickpeas, and red onion with the dressing and toss gently. Top with avocado slices and seeds.

Enjoy it on its own or toss it in a wrap for a lunch that nourishes and energises!
