Vegan Protein Chocolate Mushroom Mousse

I think it’s safe to say that we’re all partial to an afternoon fix or dessert after dinner.
This creamy, rich vegan mousse not only satisfies your sweet tooth but is also rich in high-grade functional mushrooms and adaptogens, making it a sweet recipe that supports your mind and body health.
And it is so simple and quick to make (great for a dinner party) with only five ingredients that happen to also be high-protein, and healthy. You could almost get away with having it for breakfast…
Ingredients (makes 2 portions):
350g Silken tofu (organic if possible)
40g Cacao powder
60g Medjool dates
1 tbsp Verve Honest Mushroom powder
1 tbsp Milled hemp seeds
Steps:
1. Soak the medjool dates in hot water for 10 min, then drain.
2. Blend silken tofu, dates, cacao, mushroom powder, and hemp seeds until smooth.
3. Transfer to glasses and chill in the fridge.
4. Top with cacao nibs, coconut, or berries - or anything you fancy!
5. Enjoy
